Bengali Recipe Dahi Hilsa

Ingredients:

Hilsa fish (4 pieces),

Yogurt (100gm),
White mustard paste (1 teaspoon),
Black mustard paste (1teaspoon),
 Mustard oil (4 tablespoon),
Green chili (3-4),
Raisin (1 tablespoon),
Salt, sweet, 
turmeric powder (according to taste)


Steps:

Clean and wash fish pieces thoroughly. Apply salt and turmeric powder and keep aside for 10 minutes. 
Mix all the items with the fishes, except green chili and raisin. Leave at least 10 minutes for marination. 
Now add the green chili and raisin with it and bake the fish in the oven for 6-7 minutes.
 Now it is ready to serve.

Eggless Chocolate Cake

Ingredients
Dark chocolate100 grams
Butter1 cup
Refined flour (maida)1 1/3 cups
Baking powder2 teaspoons
Powdered sugar1 cup + 2 tablespoons
Vanilla essence1 teaspoon
Milk3/4 cup
Walnuts,peeled1/2 cup
Method
Grate chocolate. Cut the butter into cubes. Grease a Microwave proof dish. Melt butter and chocolate in a Microwave proof bowl in the Microwave oven for one minute on Microwave HIGH (100%).

In another bowl sieve refined flour and baking powder. Mix the melted butter and chocolate well. Add powdered sugar, vanilla essence and mix. Add the flour mixture and mix. Correct the consistency by adding milk. Add walnuts and mix gently.

Transfer the mixture into the greased Microwave proof dish. Bake in the Microwave at HIGH (100%) for seven minutes. Allow standing time of five minutes. Cool, slice and serve.

Step 1: You will need

  • 45 ml olive oil
  • 1 medium onion
  • 400 g chicken fillet
  • 2 cloves of garlic
  • 1 green chilli
  • 1/4 tsp salt
  • 1/4 tsp turmeric
  • 1/2 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1 tsp tomato purée
  • 1/4 tsp garam masala or 1 tsp curry paste
  • 30 ml double cream
  • 1 Teaspoon
  • 1 Tablespoon
  • 1 Chopping board for meat
  • 1 Chopping board for vegetables
  • 1 Sharp knife
  • 1 Non-stick frying pan
  • some Plates to hold the ingredients
  • 1 Wooden spoon

Step 2: Prepare

Finely chop a medium sized onion

Remember- when preparing ingredients, the smaller you chop things, the faster they cook. Chop your ingredients really small, so they'll be ready in no time.

Crush 2 cloves of garlic with the side of a knife. Now peel away the skin, and finely chop.

Finely chop a green chilli. Unless you want an incredibly hot curry, use the knife to take out as many seeds as you can. Chilli juices can burn your skin so when you've finished, wash your hands.

Take the chicken on a fresh chopping board. Chop into small bite-size pieces. Wash your hands after chopping the meat.

Step 3: Fry the onion

Heat a frying pan over a medium heat. Add 3 tablespoons of vegetable oil. Then add the chopped onion, and fry for 1 minute.

Step 4: Add chicken

Put the chicken in, and continue to fry for 5 to 6 minutes. The chicken will start to cook, and turn entirely white on the outside.

Step 5: Add garlic and chilli

Put the garlic and chilli into the pan, and stir. Carry on frying gently over a medium heat, until everything is golden brown, which will take 2 to 3 minutes. Keep stirring.

Step 6: Add spices

Put 1/4 teaspoon of salt, 1/4 teaspoon of turmeric, 1/2 teaspoon of ground cumin and 1/4 teaspoon of ground coriander in the pan. Stir well.

Step 7: Add more flavour

Add 1 teaspoon of tomato purée, and 1/4 teaspoon of garam masala or curry paste. Here we're using freshly made garam masala.

Stir, and fold 2 generous tablespoons of double cream into the mixture.

Step 8: Check the chicken

If you're worried about whether the chicken is cooked, take a large piece from the pan, and cut it in half. It should break easily, and be white all the way through, with no trace of pink. It should also be piping hot throughout.

Step 9: Serve

Serve hot with freshly cooked basmati rice, or naan bread.

Ingredients:
Fish (firm variety) – 1/2 lb (approx 500 g) – cleaned
Turmeric Powder – 1/4 tsp
Salt – 1/4 tsp
Mustard Oil – 3 Tbsp
Onion – 1/2 large
Tomato – 1/2 large
Garlic – 7 to 8 large cloves
Green Chilies – to taste
Mustard Seeds – 1 Tbsp
Cumin Powder – 1/4 tsp
Red Chili Powder – 1/4 tsp or to taste
Turmeric Powder – 1/4 tsp
Salt – 1/2 tsp
Hot Water – 1 1/2 cups
Cilantro (Coriander Leaves) – for garnishing
Method:
1. Marinate Fish for 10 minutes with 1/4 tsp of Turmeric Powder and 1/4 tsp Salt.
2. In a grinder or blender, form a paste of Onion, Tomato, Garlic, Green Chilies and Mustard Seeds.
3. Heat Mustard Oil in a pan and fry the fish for 1 minute on each side. Remove onto a paper towel lined plate and keep aside.
4. In the same oil, add ground paste, Cumin Powder, Red Chili Powder, Turmeric Powder and Salt. Mix well, cover and cook for 2-3 minutes.
5. Once mixture stops splattering, uncover and continue to cook until the oil separates from the mixture.
6. Add Fish back in and coat it with the mixture.
7. Add hot Water and gently stir.
8. Cover and cook for 5-7 minutes.
9. Garnish with Cilantro and serve hot with Rice or Chapati.

Peshawari Lassi Recipe

How to make-
Mix Paneer balls with corn flour fry it in a kadai till it become brown.
In a separate kadai, fry onions till brown.
Cut green chilli into small pieces and add it to fried onion.
Then put small pieces of capsicum and fry it for sometime.

Add Fried Paneer to it.
Then drop tomato/chill/soya sauce into kadai.
Add salt also and stir it for 3/4 mints.
Chilli Paneer is ready now.

Mughlai Paratha Recipe

Recipe: Mughlai Paratha

Ingredients-

• 300 gm Maida

• 2 Eggs

• 1 tsp Baking powder

• Oil to cook

• Salt to taste


How to make-
Take a big bowl and mix flour, baking powder and salt.
Rub the flour with 2 tbsp of oil.
Add little water at a time and make soft dough.
Make 8 balls from the dough and roll out into flat thick rounds.

Apply little oil, sprinkle some flour and fold it into half circle.
Again apply little oil and flour, fold it lengthwise.
Now roll it, press down and roll out into square of 8 inches by 8 inches.

Brush the surface of the paratha with the beaten eggs.
Turn all four corners towards the middle.
Heat the girdle and apply oil.

Cook the paratha on it, applying oil along the edges.
Fry on both the sides until brown patches appear.

Corn Chaat Recipe

Recipe: Corn Chaat

Ingredients

• 2 large hard-boiled Potatoes (cubed)

• 1 cup boiled Corn Seeds

• 1 tbsp Butter

• 1 large Green Chili (sliced)

• 1 tsp Sugar

• Salt (to taste)

• 3 tbsp fresh Lemon Juice

• ¾ cup plain Sour Yogurt

• 3 tbsp Onion (finely chopped)

• 1½ tbsp fresh Cilantro (finely chopped)


For Chat Masala

• 1 Dry Red Chili

• ½ tsp Black Pepper

• ½ tsp Coriander Seeds

• 1 tsp Cumin Seeds


How to make:-
Heat a frying pan and fry all the chat masala ingredients, until crisp.
Remove from heat and grind into a fine powder. Set aside.
Blend yogurt with ½ cup water until smooth. Set aside.

Heat butter in the same frying pan and fry potato cubes and green chili, until brown, on high heat.
Add boiled corn, salt, and sugar. Stir for 15-20 seconds and remove from heat.

Drizzle lemon juice and toss well.
Transfer the mixture into serving bowls.
Add 2-3 tbsp yogurt on each bowl and garnish with onion and cilantro.

Sprinkle some of the prepared chat masala and serve.

Honey Lemon Chicken Recipe

Recipe: Honey Lemon Chicken

Ingredients:
4 tbsp Cooking Oil

500 gm Chicken (cubed)

2 tbsp Honey

1 tbsp Lemon Rind (grated)

1/3 cup Lemon Juice

1 tbsp Garlic Paste

1 tsp Ginger Paste

1 tsp Red Chilli Powder

Salt and Pepper to taste

2 tbsp Coriander Leaves (finely chopped)

Procedure:
Heat the oil in a frying pan on low heat.
Mix well rest of ingredients except coriander leaves by adding chicken last.
Add the mixture to frying pan and cook covered until tender and evenly brown, stirring occasionally.

Transfer into a serving platter and garnish with chopped coriander leaves.
Serve as appetizer.

Keema Biryani Recipe

Ingredients:

350 gm Basmati Rice

400 gm Keema

3 tbsp Curd

1 large-sized Onion (chopped)

1 tbsp Ginger-Garlic Paste

100 gm Ghee

1/2 cup Milk

A few strands of Saffron

1-inch piece Cinnamon

3-4 Cardamoms

4-5 Cloves

1 tsp Red Chili Powder

1 cup Chicken Stock

2 tbsp Lime Juice

Procedure:
Cook rice in salted water, till it is just half cooked. Drain the water and keep it aside.
Mix the saffron in milk and keep aside.
Heat ghee in a medium-sized pan and fry chopped onions, till they become translucent.
Now, add the whole spices and let them splutter.

Mix in keema and ginger-garlic paste. Fry for 6-7 minutes, on medium heat.
Once the keema is properly fried and releases aroma, mix curd andred chilli powder.
Turn the heat to low and cook for another 3-4 minutes.
Turn off the flame and set aside.
Place one part of the half cooked rice in a baking dish.
Then, add a portion of prepared keema and sprinkle half of the saffron milk and half of the lime juice.
Now, cover with another portion of rice and repeat the same process with keema, saffron and lime juice. Top it with the remaining rice.
Pour chicken stock over the layers of biryani.

Lid the top or seal it with a foil. Bake in the oven, at a low temperature for 15 minutes.
The Keema Biryani is ready to be served.

Top 10 Food Habits to Prevent Cancer

Research shows that a large percentage of cancer-related deaths, may be even the majority are directly linked to lifestyle choices such as smoking, drinking, a lack of exercise, and an unhealthy diet.The food you eat has a powerful effect on your health, including your risk of cancer. You may land up eating many foods that fuel cancer, while neglecting the powerful foods and nutrients that can protect you. If you change your diet and behaviour, you can minimize your risk of disease and possibly even stop cancer in its tracks.


Food Guidelines to prevent cancer:

1. Focus more on plant based foods like fruits, vegetables, whole grains, nuts, pulses etc. Start your day with fruits and nuts. Have some whole grain cereal for breakfast. Make sure to have a big portion of salad with vegetables like lettuce, tomatoes, beetroot, cucumbers etc pre-lunch and pre-dinner. Carry snacks like fruits, trail mixes (sunflower seeds, flaxseeds, almonds, walnuts etc), opt for sandwiches with multigrain breads and lot of veggies in it.

2. Fiber is the key component to prevent cancer. All plant based foods are rich in fiber which helps to keep your digestive system clean and healthy and push the cancer causing compounds out of the gutbefore they can harm you.You can add fiber to your diet by replacing white rice with brown rice, eating the fruits with skin, choosing popcorn over potato chips etc.

3. Avoid processed foods . The more you eat food in its original form, the better protection it gives. For example instead of drinking orange juice, peel and eat the orange or prepare oatmeal porridge with raisins rather than having an oatmeal raisin cookie.

4. Cut down on red meat and whole fat milk as research shows that vegetarians are about fiftypercent less likely to develop cancer than thosewho eat meat. That is because meat and milk lack fiber, antioxidants and nutrients that have cancer protective properties and is high on saturated fat which is linked with increased risk of cancer. But you don't need to eliminate meat completely. A good visualreminder is to have 2/3 rd of your plate filled with plant foods and 1/3 rd of it with meat and dairy products. You can cut them down by cutting animal products to a palm-size, adding some salads or beans to it rather than using it as themain element. Choose fishor lean chicken as they arelow on fat, avoid processed meats like sausages, salamis etc.

5. Choose your fats smartly . Saturated and trans fats are demons for health, so limit them. Saturated fats (bad fats) are found in butter, ghee, eggs, whole fat milk and red meats and trans fats are found inprocessed and junk foods like burgers, pizzas etc. Onthe other hand unsaturated fats (good fats) like MUFA and PUFA are found in oils that are liquid at room temperature eg: olive oil, ricebran oil, etc. The othersources of unsaturated fats are avocados, nuts like walnuts, almonds etc.Also focus on omega-3 fatty acids , which fight inflammation and supportbrain and heart health. Good sources include fish like salmon, tuna, and flaxseeds. You can add them by eating fish once or twice a week, adding flaxseeds to your salad, avoiding fried foods, checking the label for bad fats.

6. Opt for cancer-fighting foods . You immune system needs to be strong to fight against cancer causing agents. You need to eat a variety of colourful foods with antioxidants (vitamin A, C,E and selenium) and phytochemicals that help strengthen immunity and fight diseases. Such foods are tomatoes, broccoli, dark green leafy vegetables, grapes, cranberry, carrots, cabbage, garlic, onions, grapefruits, blueberries, chilli peppers, jalapeno, soy products like tofu etc. Green tea is also antioxidant rich, so replace your black tea with three cups of green tea per day.

7. Drink plenty of water as it helps to eliminate toxins from the body and supply nutrients to the cancer cells which can kill and prevent them from multiplying. Avoid sugary drinks like colas, juices etcas they increase inflammation and cancer growth.

8. Preserve nutrients when you cook. Wash the vegetables and fruits witha brush to remove all pesticide residues. Eat raw as much as possible, this helps retain the nutrients. Steam the vegetables using very little water. Prevent over-heating of oil as it can become carcinogenic.

9. Instead of deep-frying, pan-frying, and sautéing, opt for healthier methodssuch as baking, boiling, steaming, or broiling. Store oils in a cool dark place to prevent it from becoming rancid. Use microwave friendly containers of good qualityto prevent plastic materialinteraction with food.

10. Avoid foods that look or smell mouldy, as they are likely to contain aflatoxin, a strong carcinogen. Nuts will stay fresh longer if kept in the refrigerator or freezer.

Mooli ka parantha Recipe

Mooli ka parantha

Ingredients:-

• 1 cup wheat flour

• 1/2 cup water

• 1 cup mooli finely grated

• 1/2 tsp anardana

• 1/2 tsp red chili powder

• 1/2 tsp coriander powder

• 1/2 tsp amchoor

• 1/4 tsp garam masala

• 1 tsp ginger finely grated

• 1 sprig coriander leaves

• 1/4 tsp ajwain seeds (optional)

• salt to taste

• vegetable oil.

Procedure:
Knead the wheat flour with water and salt and make into 4 balls. Grate the cauliflower and place it in a bowl with the rest of the ingredients and mix well, Lightly dip a wheat flour ball into white flour and flatten it with a rolling pin. Place half of the mooli mixture on top of the rolled wheat flour and set aside. Flatten out another wheat flour ball and place on top of the first one. Close the sides with your hands and flatten it out with a rolling pin. Place the above on a frying pan and cook each side for 2 minutes. Fry each side again with oil. Serve with yoghurt.

Low Calorie Kheer Recipe

½ kg Dates,

100 g Jaggery,

Silver Vark for Garnishing

Heat oil in a frying pan, saute mustard seeds and dried red chilli for 1 minute. Add cabbage, carrots and green chilli. Reduce heat to low, stir-fry the vegetables for about 30 seconds. Add sugar and coriander, stir fry for another 5 minutes or until vegetables are tender. Add lemon juice. Remove red chilli before serving.
